I always prefer white sauce over tomato sauce which is why I have tried a lot of variants of white sauce. With little variation, you will get totally different flavor each time.
I will mention all the alternatives in one recipe. You can try out all alternatives in different combinations each time and have fun!!
Ingredients (serves 2)
200 grams pasta (boiled as per the instructions on the packet)
For the sauce
1 cup chicken stock (can be replaced with 1 cup cream of mushroom or 1 cup vegetable stock)
1 tbsp cornflour or maida
1 cheese cube(add more if you wish to)
1/4 tsp black pepper
11/2 cup milk
1 tsp butter
4 large garlic cloves crushed or grated

[First and second ingredients for the sauce can be replaced with half packet of ready made soup mixture, example, knor chicken soup or mushroom soup or vegetable soup]
Other ingredients
1 cup small chicken cubes boiled
(Two Vegetarian alternative :
- 1/2 cup carrots chopped into 1 inch thin long pieces, 5 small broccoli florets, 1/2 cup cabbage, chopped into 2 inch thin long pieces, all boiled.
- 11/2 cup mushrooms chopped)
[When you are boiling vegetables, add some salt and black pepper to it. Do not over boil, pieces should be crunchy]
1/2 cup sweet corn
1 capsicum chopped
1 onion chopped
Preparing the sauce..
In a sauce pan on low flame, add butter. When the butter melts, add crushed garlic and fry till golden brown. Add cornflour (or any of the other alternatives) and roast for 10 seconds. Now add milk and stir continuously so that it forms a smooth cream without lumps. If you find it too think, add some more milk.
Add cheese, salt and black pepper and bring to boil.
Preparing chicken/vegetables..
In a separate pan, add some butter and fry onions in it. Now add chicken cubes (or boiled vegetables/mushrooms) along with sweet corn and capsicum and fry for 2 minutes. Remember, vegetables need not be completely cooked, they should be crunchy.
Add the cooked chicken/vegetables to the sauce and give it a stir.
In a serving plate, put boiled pasta and pour the sauce on top of it. Enjoy!
