Coconut and mint flavoured rice

This quintessential rice dish goes well with any curry!
If you are expecting sudden guests at home, this rice dish along with any simple curry is your saviour. The rice itself is so yummy and comforting that curry is just a side dish.

Team it up with a simple curry and raita and you are good.
Curries like alu, chole, sprouts, chicken, mutton, egg tastes awesome with it.

It does not have lot of masalas too so it is healthier and different from usual party preparations. It can be your signature dish!



Ingredients (Serves 2)
1 cup basmati rice
2 cups water
1/2 cup grated coconut
1/2 cup fresh mint leaves
1 medium size onion chopped
1 green chilly
1 tbsp ginger garlic paste
1 black cardamom
3 cloves (laung)
1 inch cinnamon stick
Pinch of nutmeg powder(Optional)
2 tbsp oil
Salt to taste

Dry roast all the spices.
Fry onions and green chilly in 1 tbsp oil. Once they turn golden brown, add ginger garlic paste and fry on low flame for 2 minutes. Grind the onions along with spices, coconut and mint.

Add rest of oil in pressure cooker, when it is hot, simmer the flame. Add the masala paste and cook for 5 minutes by covering with lid.
Add washed and pre soaked basmati rice and water. Add some salt to taste, mix well.
After first whistle on high flame, simmer the flame and cook for another 5 minutes.
Open cooker after the pressure has completely released.

Yummy coconut and mint flavoured rice is ready!
